By the early 1900's there were only an estimated 5 million jobs that were dependent on tips and, at the same time, several states tried to outlaw the practice as it was considered unAmerican in that it produced a servile dependent class. Before the introduction of tipping, employers were expected to pay a standard wage and the employee was not dependent upon the largesse of customers for the bulk of their wages. Bad, sloppy or indifferent service was not rewarded with a tip. They want the right to leave a substandard tip for substandard service, or leave a truly generous tip if they had a great time.<br /><br />And if you add a full tip to the bill, and the customer gets bad service, the customer can (and has every right to) dispute it. So you may now have to get a likely busy manager/supervisor to interact with annoyed customers and adjust checks.<br /><br />2) Depending on the restaurant and its clientele, servers don't like it.
